Popcorn Bread

Popcorn flour is a fun, gluten-free alternative but is not available in any store (that I know of!). To make it, simply pop your favorite popping corn, then put it in a food processor or blender and grind it to a fine powder—voilà!—popcorn flour. The resulting flour imparts a distinctive popcorn flavor. In this bread, it also offers the benefits of another whole-grain flour but is too airy to support a loaf of bread on its own, so must be combined with other gluten-free flours that offer bulk as well. A really unique treat that is fun to make and to eat!
